Prep time - 15 mins | Cook time - 25 mins | Makes about 2 cups
Serve this rich, dark chutney with a sharp cheddar, fresh apples and crackers for a beautiful, easy appetiser or add some bread, nice salami and charcuterie and turn it into a simple lunch.


4 apples (Granny Smith are great), peeled, cored and chopped into small cubes
500 ml (2 cups) apple cider vinegar
440 grams (2 cups) Sugars of the World Colombian Panela Sugar, lightly packed
1 brown onion, diced
120 grams (¾ cup) raisins or dried cranberries
1 tablespoon grated ginger
1 tablespoon mustard seeds
1 teaspoon ground allspice
1 teaspoon salt


1.    Combine all ingredients in a large saucepan on medium-high heat and, stirring often, bring mixture to the boil. 

2.    Reduce heat and simmer for 25 minutes, stirring often, or until mixture is dark, glossy and syrupy.

3.    Divide into sterilised jars, cover and keep in the fridge for at least 2 weeks before using. 

Notes - always serve at room temperature.
